GUR KI GACHAK: A WINTER TREAT



















 

    Gur (jaggery) ki gachak is a traditional Indian sweet made with jaggery and sesame seeds. It's a popular treat, especially during the winter months. Here's a simple recipe for making Gur ki Gachak at home:

Ingredients:

·         1 cup sesame seeds (til)

·         1 cup jaggery (gur)

·         1 tablespoon ghee (clarified butter)

·         A pinch of cardamom powder (optional)

Instructions:

Roasting Sesame Seeds:

Heat a pan over medium heat.

Add sesame seeds to the pan and roast them until they turn golden brown. Keep stirring to ensure even roasting.

Once roasted, transfer the sesame seeds to a plate and set aside.

Preparing Jaggery Syrup:

In the same pan, add ghee and jaggery.

Cook the jaggery over low-medium heat until it melts and forms a syrup. Stir continuously to avoid burning.

You can check the consistency of the syrup by dropping a small amount into a bowl of water. It should form a firm ball (hard ball stage) when rolled between your fingers.

Combining Sesame Seeds and Jaggery:

Once the jaggery syrup reaches the desired consistency, add the roasted sesame seeds to it.

Mix well to ensure that the sesame seeds are coated evenly with the jaggery syrup.

If you're using cardamom powder, add it to the mixture and mix again.

Setting the Gachak:

Grease a rolling pin and a flat surface with ghee.

Transfer the sesame-jaggery mixture onto the greased surface and quickly roll it out into a thin layer, using the rolling pin.

While the mixture is still warm, cut it into square or rectangular pieces using a greased knife.

Allowing it to Cool:

Let the gachak cool completely before separating the individual pieces.

Note:

Your homemade Gur ki Gachak is now ready to be enjoyed. Store it in an airtight container to keep it fresh. Gachak is not only delicious but also provides warmth and energy during the winter season.
