RECIPE CARROT KEER: A WINTER TREAT












Carrot Kheer and Gajar ki Kheer is a delicious and creamy Indian dessert made with grated carrots, milk, and sugar, and flavored with cardamom.

Here's a simple recipe for you to try:

Ingredients:

·         1 cup grated carrots

·     1liter full-fat milk

·         1/2 cup sugar (adjust according to your taste)

·         1/4 cup chopped nuts (almonds, cashews, pistachios)

·         1/2 teaspoon cardamom powder

·         A pinch of saffron strands (optional)

·         2 tablespoons ghee (clarified butter)

·         1 tablespoon rice (optional, for thickness)

Instructions:

Heat ghee in a heavy-bottomed pan and add the grated carrots. Sauté the carrots on medium heat until they become soft and release their aroma.

In the meantime, you can soak saffron strands in a tablespoon of warm milk.

Once the carrots are soft, add the rice (if using) and continue to sauté for a couple of minutes.

Pour in the milk and bring it to a boil. Then, reduce the heat to low and let it simmer. Stir occasionally to prevent the milk from sticking to the bottom of the pan.

Allow the carrots to cook in the milk until they are completely tender and the milk has thickened. It may take around 30-40 minutes.

Add sugar and cardamom powder to the kheer. Stir well and let it simmer for an additional 10-15 minutes until the sugar dissolves and the kheer thickens.

If you soaked saffron strands, add them along with the milk to the kheer, giving it a nice color and aroma.

Once the kheer reaches your desired consistency, turn off the heat and let it cool.

Garnish the carrot kheer with the chopped nuts of your choice. You can also add a few saffron strands on top for a decorative touch.

Serve the carrot kheer warm or chilled, as per your preference.
