RECIPE OFMANGO CUSTARD: A SUMMER TREAT

Mango Custard Recipe

Ingredients:

  • 1. Ripe mangoes - 3 large or 4 medium
  • 2. Milk - 1 liter
  • 3. Sugar - 1/2 cup (adjust to taste)
  • 4. Custard powder - 4 tablespoons (vanilla flavor)
  • 5. Fresh cream - 1/2 cup
  • 6. Chopped nuts (almonds, pistachios) - 2 tablespoons
  • 7. Saffron strands - a pinch (optional)
  • 8. Cardamom powder - 1/2 teaspoon
  • 9. Water - 1/4 cup

Instructions:

1. Prepare the mango pulp:

   a. Peel the mangoes and chop them into chunks.

   b. Blend the mango chunks into a smooth puree using a blender or food processor. You should have about 2 cups of mango puree.

2. Prepare the custard:

   a. In a bowl, dissolve the custard powder in 1/4 cup of water to form a smooth paste. Make sure there are no lumps.

   b. Heat the milk in a heavy-bottomed saucepan over medium heat. Stir occasionally to prevent scorching.

   c. Once the milk comes to a gentle boil, reduce the heat to low and add sugar, stirring until it dissolves completely.

   d. Gradually pour the custard paste into the milk while stirring continuously to avoid any lumps.

   e. Cook the custard mixture on low heat, stirring constantly until it thickens to a creamy consistency. This usually takes about 8-10 minutes.

   f. Once the custard thickens, remove it from the heat and let it cool to room temperature.

3. Combine the mango puree and custard:

   a. Once the custard has cooled down, gently fold in the mango puree until well combined.

   b. Add cardamom powder and saffron strands (if using) to enhance the flavor.

   c. Mix in the chopped nuts and fresh cream, reserving some for garnishing.

4. Chill and serve:

   a. Transfer the mango custard to individual serving bowls or a large serving dish.

   b. Cover the custard with cling wrap, making sure it touches the surface of the custard to prevent skin from forming.

   c. Refrigerate the custard for at least 2-3 hours or until thoroughly chilled.

   d. Before serving, garnish the mango custard with a drizzle of fresh cream and a sprinkle of chopped nuts.

   e. Serve chilled and enjoy the creamy, fruity goodness of mango custard!

Note:

1. Use ripe and sweet mangoes for the best flavor. You can adjust the amount of sugar based on the sweetness of the mangoes.

2. For a richer custard, you can replace some of the milk with condensed milk or evaporated milk.

3. Feel free to customize the recipe by adding other fruits like strawberries or bananas along with the mangoes.

4. If you prefer a smoother texture, you can strain the mango puree before adding it to the custard.

5. Experiment with different garnishes like shredded coconut, chocolate shavings, or mint leaves for a decorative touch.
